Bring Me Some Sweetness (Love and Prosperity)Pancakes
A Recipe from "The Insomniac's Kitchen" by Lorelei Moon
The plus side of my insomnia is that I get up at night and invent new food recipes and cocktails. Here is my recipe for pancakes to bring sweetness into your life!
- Apples for LOVE and the Feminine and for Venus!
- Almonds for more masculine love energy, a bit of prosperity and for Mercury!
- Blueberry is typically used for protection and though those qualities won't hurt, I'm also adding them for yumminess and for health and vitality!
- Cinnamon is also a love & prosperity boost.
- Vanilla is for passion and mental clarity so it will please both Venus and Mercury, Huzzah!
- Coconut milk brings some sweetness!
- Lemon is also for love and removal of things blocking your way to your goal!
Step One: Gather the Ingredients!
First, ze ingredients:
- 1 3/4 cups of Trader Joe's Buttermilk Pancake Mix
- 1/2 Cup Milk
- 1/2 Cup Coconut Milk
- 1 egg
- A handful of sliced almonds
- hand full of blueberries sliced and smooshed (Smooshed is a secret word that professional chefs use)
- A few slices of apples, minced
- A couple of slices of lemon to be squeezed into the batter
- 1/4 tsp cinnamon
- 1 tsp of vanilla
- A few pats of butter for your pan!
*I always have leftover garnish fruit from a bartending gig and I mix it all together so it all the flavors mix. So these apples are already marinated in strawberry and lemon juice! Yum!
Step Two: Mix Well!
Mix the egg, milk, coconut milk, cinnamon and vanilla with the pancake mix until it's pretty smooth! You don't want lumps in your love life, health or cash flow do you?
Step Three: Add your fruit and nuts!
That would be the minced apple, smooshed blueberries and sliced almonds!
Step Four: Mix Some More!
With enthusiasm!
Step Five: Squeeze!
Squeeze in the lemon juice from those slices of lemon and mix some more until the mixture is as smooth as possible!
***By the way, speaking of LOVE! If you live in/near Oakland, those fabulous stripes on my nails were painted on freehand by the fabulous Jennifer of Nail Design in downtown Oakland! She's a lovely and talented nail artist, ridiculously inexpensive, and has done what I thought was impossible, get me to have nails again! I'd like to give her a prosperity boost by sending some business her way!
Step Six: Tool Time!
Get your tools ready and melt your butter! Get the pan nice and hot then lower the heat a bit!
I like to use an angled spatula to gently lift the edges while side one is cooking and gauge the readiness for flipping, then the turner to flip. I use a ladle and a small pan to get the size pancakes I prefer.
Like Julia Child, I don't get stingy on the butter. This also means I don't have to add butter because my pancake is already buttery!
I'm in love with my old Wedgewood Stove!

Step Seven: On the Way to Pancake Heaven!
Ladle in some batter and let it start to cook!
Step Eight: Watch It!
When you start to get lots of holes in the wet batter and the edges seem firm, it's time to flip!
Step Nine: Flippin' Time!
Side Two will just take a few seconds to finish if your pan is hot enough!
Step Ten: Stack 'Em Up Yum!
And Voila! Your magical pancakes ready for consumption! You can add a little syrup or even powdered sugar, a fruit or flower garnish if it strikes your fancy!
